A healthy dinner for Workout-Wednesday. Spiraled zucchini noodles sautéed in tomatoes, radishes, and olive oil. Filling the noodles with sliced Apple Chicken Sausage topped with green onions, with a side dish of grilled asparagus al dente . A light meal after a great workout, and ready in 15 minutes! 1 Zucchini – spiraled into noodles (peel zucchini skin before using spiralizer)
6 cherry sized tomatoes – cut in half
1 radish – sliced
sautee tomatoes and radish in olive oil on medium-low heat for 4 minutes. add noodles for 1 minute. add garlic powder, salt & pepper as desired. remove from pan and set zucchini mix on plate.
2 Apple Chicken Sausages – trader joe’s brand is great
sautee as instructed on package for 7 minutes
1 bunch of asparagus
grill in same pan as zucchini mix with olive oil- on medium-high for around 5 minutes or until al dente. add garlic powder, salt & pepper as desired. remove from pan and set asparagus on plate.
remove apple chicken sausage from pan and cut into slices. mix into zucchini noodles and serve on plate with asparagus. top with chopped green onions and serve with sparkling water.
now eat and enjoy! mmmmmmmm
