Pineapple Pico


This recipe is MY baby. I discovered it years ago and have made it my own by adding special ingredients and spices to perfect its flavor. This recipe isn’t just a food item I bring to parties or a get-together. This is my way of saying, “I fucking love you man.” Sometimes it’s a deep love but most of the time it’s like, “Hey, you rock…love you.” Food is a way of survival and by sharing my favorite dish of all time with someone is like saying, “I want you to live…now eat you skinny rail!”
The trick is that ALL ingredients are fresh; pineapple, lime, garlic and all. The other trick is that I dice, slice, and cut each item so tiny and perfect. It takes me an hour but it’s worth it. I just blast my favorite “Pepper” & “Rebolution” songs and let it roll.
Try it out – there’s no doubt you’ll be the party food favorite with this dish.

1 fresh whole pineapple
2 large vine tomatoes
1 large red bell pepper
1/2 sweet onion
1/2 bunch of cilantro
2 large fresh limes
8 cloves of garlic
Salt & garlic powder to taste
1 large ripe avocado
Dice pineapple, tomatoes, onion, red bell pepper, and cilantro – place in Large bowl. Dice garlic and pan sear in olive oil before it browns – place in pineapple mix. Squeeze all lime juice into bowl, add salt & garlic powder to taste. A lot of salt, but taste as you pour, and mix well. Dice avOcado and serve on top of mixed pineapple pico.
Serve with tortilla chips, chicken, salmon, tacos, burriTOS, steak, burger, rice, heck you can even try it with ice-cream. It’s good with everything!
